En ce qui concerne le mobilier vert, notre jardin peut sembler pauvre, il est plutôt le résultat d'un choix précis : celui de mettre en valeur la beauté de nos majestueux oliviers millénaires que vous avez certainement admiré et la typicité du paysage de ce coin des Pouilles qui, à notre avis, ne correspond pas aux plantes et fleurs étrangères à la végétation méditerranéenne, mais belles dans leurs couleurs éclatantes. Au lieu de cela, pour les grands espaces de nos places, nous avons privilégié les nombreuses essences aromatiques spontanées comme la roquette, le fenouil sauvage, la bourrache, les herbes parfumées du thym et de l'origan, puis les lentisques, myrtes, lauriers roses, lantanes et bougainvillées qui rendent notre paysage unique dans ses parfums et ses nuances vertes. De plus, notre choix de longue date de culture biologique n'est pas compatible avec les cultures habituelles des nombreuses fleurs colorées qui décorent normalement les installations touristiques.
