The cooking, based on home-grown produce, offers a wide variety of recipes largely handed down over the generations. It is therefore the farm produce that dictates the menu, which varies according to the seasons. The farm, which extends over about 750 hectares, cultivates olive trees, citrus trees and fruit and vegetables, and breeds cows, buffalos, goats, sheep, horses, donkeys and pigs. The livestock breeding is also linked to the production of meat and cheese. At the dairy farm, as well as typical local cheeses, some cheeses are produced which have been developed through patient experimentation by cheese-makers and which give the production its unique nature. Olive oil is produced in a mill which processes only olives from the farm, following the traditional method with millstones and cold presses. The entire production is strictly organic. There is no better time or place to rediscover the taste of meat from animals bred using the open grazing method, the delicate flavour of the oil from the hills, the unique flavours of cheeses, homemade bread baked in a wood-fired oven, freshly-picked vegetables, marmalades prepared using the fruit grown on the farm, sauces, mushrooms, home-made pasta and much more.
For nature lovers, the farm - located in the heart of Nebrodi Park - offers unique opportunities: there are several trails, within the boundaries of the farm, which take you through age-old woods, ponds and green glades. During the walks, it is easy to come across grazing animals, wild cats, foxes, hedgehogs, martens, hares, tortoises and turtles, colourful lizards and diurnal and nocturnal birds.
A short walk takes you to the Abbey of San Pancrazio (12th century), while a more challenging hike leads you to the seventeenth-century Ponte dei Ninfi bridge, over the San Fratello stream, where you can go swimming at certain times of the year.
From June to September you can swim in the pool, converted from an old irrigation tank. In autumn, you can pick mushrooms, plentiful in the farm’s woods. In the spring, wild asparagus means the mushroom season is quickly forgotten. At some times of the year, you can watch the milking and cheese making, tasting the cheeses and ricotta.
