Once upon a time there was the Jato Valley, a miracle of colours, perfumes and scenery, and it's still there, just a few miles from Palermo. One day some Jesuits who had decided to settle in the area decided to transform the old tower into a monastery, and to do so they enlarged and embellished it, so as to make it a worthy abode. Years passed, time changed, the Jesuits went away and their monastery was purchased by a prince who changed it into a farm, fortified just in case – it might appeal to some brigand. The fact was that it was florid and rich, with a lot of land around it for growing crops and grazing animals. Sometimes the prince came out from the nearby town to spend some time on his country estate, bringing the family with him for a holiday.

The holiday farm, whose main produce is cereals and excellent extra virgin olive oil (there is also fruit and vegetables, and a few farm animals are also raised), has preserved the old structure of the princely farm, with two inner courtyards on which there look out the various rooms, all characterised by elegance and comfort. There are ten rooms, all en suite.
