The agriturismo
On a 17 hectare estate comprising olive groves, pasture and woodland, on a hill overlooking typical Tuscan landscape, a stone farmhouse dating back to the 1700s. In the front courtyard, an old hayloft and, further down, towards the countryside, an old stable block surrounded by greenery.Here, Stefano’s dream took shape:he built a farm, on which, in total respect for the environment, he created a 20 KW photovoltaic system, an articulated waste treatment system based on the principle of active mud and aquatic plant water purification, and a woodchip boiler fuelled by the farm’s own plant waste.
The accommodation
The renovation process involved the main building and the stable block, today home to over 100 livestock, a number set to increase.The old pathways that once united the various colonial units have been recovered, providing a route to Borgo Casorelle.Take the old Giugnano trail, through two 1700s arches, and you’ll come to “La Dispensa”:with a professional kitchen and wood burning oven, this is the perfect place to enjoy simple Tuscan country dishes, cured meats and cheeses, and stuffed focaccia, all prepared with a particular focus on seasonal ingredients, selected directly from local farms.
The farmhouse is spread over three floors:on the ground floor, the dairy workshop gathers the farm’s milk, producing ricotta, yoghurt, and “Du Passi” fresh and aged cheeses, all available for purchase in the shop next to the dairy.The east side of the farmhouse offers B&B accommodation:spread over two levels, you’ll find a spacious lounge with open fire where you can enjoy breakfast and dinner, and 4 rooms with bathrooms.Finally, an old hayloft has been converted into a small but efficient olive press, with all the equipment required to produce olive oil.
