We have recovered the kitchen of our grandmothers, handed down from generation to generation therefore, full of history and experimentation, that of territoriality and typicality, even more, given that the farms, for regional provisions, must use local products.
We chose our raw materials one by one, going personally to the farms of the province and Lombardy, favoring small businesses that make tradition their cult and, therefore, full of history. Our selection criteria are based on quality and organic crops and on farms in the wild and semi-wild, as we do with our sheep from the Bergamo native breed.
